Your 2018 Jeep Grand Cherokee actually lets You switch between either a digital speedometer or an analog speedometer. Internally, the Jeep is using digital, not analog --- there isn't a cable, it's now handled by the ECU. To switch settings, as well as changing other displays, such as miles to kilometers (Canadian, eh), You can find some arrows with an OK button in the middle of all of them on the left side of Your steering wheel. Those are what You're going to want to use. A small note about the analog speedometer setting, is that some drivers find that if they're wearing polarized sunglasses, they can't read the displayed values at all! If You're wondering why it's not working and You're wearing some glasses like this... Try just takeng them off.
