The 2001 Toyota Avalon came standard with A4-speed automatic transmission and they made available no option this year for a manual transmission. This transmission will have a total fill capacity of 8 US quarts. You're going to need to run either Dexron VI or a multivehicle transmission fluid on this vehicle. Toyota also sells their own brand of automatic transmission fluid if You want to go that route but it is not necessary and it's a bit harder to obtain. If You plan on doing the change Yourself You'll spend between $70 and $100 in fluid costs but that will be cheaper than the $180 to $350 You can expect to spend at a shop.
