Your 2007 Honda Element can use either a conventional or synthetic oil or a blend of those, and comes with SAE 5W-20 directly from the factory. You can change the engine oil viscosity without invalidating Your warranty, so it really comes down to preference -- though, realize that the factory engineers and laboratories have run many many tests to come up with the best lubricant for the default installation. All that said, if You live in hotter climates, go ahead to a higher viscosity if You want. As for the composition, it depends on how long You want to go between oil changes; synthetic's more expensive, at almost thirty bucks for a quart, but You'll get double the mileage out of it over a conventional one.
