If You either lower or remove the rear seats in Your Ford Escape it should be able to fit a full size mattress but it is going to be a very compact fit and You still may need to use a bungee to keep the trunk closed while driving. Make sure to be aware of local laws if You do have it sticking out the back as most jurisdictions will limit You to a foot or less of an item hanging out the rear of the vehicle before You will be fined with a ticket.

A full size mattress will fit in a ford escape, but it might be a tight fit.
You answered your own question. A full size mattress does. Would you ever say a full size king mattress? No because "full" is an actual size.
