The car was also checked 30 minutes after the oil change and the dip-stick still shows almost a quart low. The past 3 oil changes I have added a full 5 quarts of oil and yet the dip-stick still shows that it is low. Has anyone else had this experience?

Yes, I've had the same issue and add a full 5.0 quarts with a filter change. Reads right at the full level an hour after the change. By the way, who would change their oil and not do a filter??? I run OW-20 full synthetic with a K&N PS1010 filter.
