If You want to disable the auto start-stop on the Ford Escape then You are in for some bad news. In short it cant be turned off, and while You can pull the fuse for it, You need that fuse for other systems. What You can do is buy an eliminator chip. This will cost You about 100 dollars on average, and You will have to pay to have it wired into the CPU as well. This will kill the auto start-stop system. That said it will also void Your warranty so You will want to use it at Your own risk.

The auto start/stop on a ford escape can be disabled by manually pressing the auto-start stop button at the beginning of your trip.

The eliminator chip that Mike E is talking about can be found here. $100, easy to install, 60 day warranty, and it won't void your car warranty. Https://www.autostopeliminator.com/collections/ford/products/2017-ford-escape-autostop-eliminator

Autostop Eliminator just plugs into the OBD port and requires no special skill or wiring. It basically makes "OFF" the default and you can turn the feature back on by using the switch on the console and the module will remember the position of the switch.
