The thermostat in Your 2008 Honda Accord is located below the headers to the right of the alternator. It is inside a plastic coupler that has a rubber coolant hose on one end and the other end is bolted to the engine block. The purpose of the thermostat in the Accord and other vehicles is to control the amount of coolant that is pumped through the engine block to keep it from overheating. The way a thermostat works is by using a cylinder, usually filled with wax, that as it is heated up by the engine temp allows a valve to open more and more. The more the valve is open, the more fluid is circulated. A spring is used to close off that valve. Modern thermostats have a built in bypass valve to protect the engine incase of a failure.
