So, you are saying the 5.3 needs 2 gallons of oil or has a capacity of 2 gallons, it should only require 6 quarts.
I've been sorting through the engine oil capacity issue with my 2011 5.3L LC9 engine, and here's the deal. Some of them take 6 quarts and some of them take 8 quarts. It depends on whether or not your truck is fitted with a HEAVY DUTY ENGINE OIL COOLER. The RPO code for this on my generation truck, and I suspect other generations as well, is KC4. You need to look at the tag on the inside side panel of the glove box and check the tag for a "KC4" RPO code. If the code is on the sticker, you need 8 quarts! If there is no KC4 code, you need 6 quarts.

My 2018 owner’s manual says the engine takes 8 quarts. I have the 1500, and the 5.3 all take that much. The 6.0 liter engine takes 6 quarts if it doesn’t have the oil cooler. Just put in 6 and check the dipstick.

Gm has a more than adequate algorithm for oil change intervals. 0% is fine. Even 10k+ mile oci and you're not going to be severely hurting the lifespan of the motor
